In Jumilla Chardonnay does not imitate Burgundy. The sun gives it body; the altitude, an acidity that avoids cloying. The result is a Mediterranean white, of ripe fruit and a hint of butter or toast if oak is involved.
Why it is in the tasting
Whoever arrives thinking there is only red here is surprised. The house Chardonnay closes or opens the table with the same dignity as a Monastrell. We serve it on the visit to tell that other Jumilla.
Service
8 to 10 °C. Fish, poultry, soft cheeses. If it is too cold, it loses perfume; if it warms, it gains alcohol and loses freshness.
