Lágrima is the must that falls by its own weight, before the press. The pomace is not crushed: one waits. The liquid is cleaner, less rustic, with finer tannin.
A decision, not an ornament
It yields less. That is why not every vat can be lágrima. When a label says so —as with Éxodo Lágrima Monastrell— it announces a more polished wine, of clear fruit, for whoever wants Jumilla without edges.
