The skin of the berry. It gives colour, tannin and much of the aroma of a red.

The skin is the peel. In red wine it is left to macerate with the must to extract colour and tannin. Monastrell has a thick one: hence its depth and structure.

White, by contrast, is usually pressed soon, without that long maceration.
