The youngest wines are those that are bottled after the so-called process of alcoholic fermentation, which means that the wines pass a short period of time in the barrels. It is for this reason that they are not considered Reserva or Gran Reserva wines.

Characteristics of a young wine

Young wines are marked by not passing much time of ageing in the barrels, which generates wines that are fruity par excellence, with diverse aromas and that are usually consumed before 3 years. The young wine is a wine excellent to drink in relaxed surroundings with friends and family, being perfect to accompany light meals.

The perfect pairing for a young wine is appetisers, meals that are not copious, pastas and white meats, such as turkey and chicken. It also pairs perfectly with gentle cheeses, mushrooms and charcuterie.

On the olfactory level, the principal characteristic of young wines is the predominance of the primary and secondary aromas, which come directly from the grape: the aromas of fresh fruit, of flowers, of vegetables or spices, as well as those that come from the making of the wine itself, such as the mineral ones. If we attend to their appearance, the colours of young wines are bright and vivid, with a moderate body.

The temperatures of fermentation of young wines are controlled, oscillating between 23 and 25 degrees. In this process, one seeks the primary aromas to which we have already referred and the secondary ones, which come from the fermentation and from the grape itself.

This class of young wines is habitually consumed before two years, the ideal moment to enjoy all the properties that this traditional and excellent drink offers.

Types of wines

The young wines of Bodegas Delampa have been created from the passion that we feel for this profession with centuries of history. Concretely, we have young white wines and red wines of the same category:

  • The white wines are those wines whose maceration is very short, that is to say that they are fermented between 20 and 22 degrees Celsius in order to obtain the floral and fruity aromas.
  • The red wines, in this case, have 2 types of fermentation: the first of them is traditional fermentation, which is the crushing of the grapes and the combination of the must with the skins at low temperatures of fermentation, achieving the greatest potential in the aromas; on the other hand, there exists carbonic maceration, which consists in placing the whole grapes in the vessel, saturating them with CO2. In this step, fermentation occurs inside the berries and thanks to this the fruity aroma is obtained.
